Key Lime Pie À La Pyrex

Key Lime Pie is one of my favourite desserts.


While grocery shopping at Walmart the other day I spotted bags of key limes for $1.49. It's rare to find key limes in my area so I decided to pick up a couple bags and bake a pie using some of my vintage, thrifted Pyrex. I found this Martha Stewart recipe


Key limes are smaller then regular limes and are quite tricky to juice. Two bags yielded a 1/2 cup of key lime juice.


What makes a good key lime pie is the crust. The recipe calls for a combination of graham crumbs and sugar ~ I used brown sugar. Next time I think I will add ground pecans to the crust.


Bake your crust until golden brown then add your key lime filling.


Bake until set.


I used the left over egg whites to make a meringue topping but whip cream will suffice.
